All Week Breakfast Burritos

Make-ahead breakfast burritos filled with crispy hash browns, sausage, vegetables, eggs, and sharp cheddar.

Eating breakfast with little ones is varied. These make-ahead burritos solved the need for something easy, substantial, and ready before a full family morning. They reheat beautifully and start the day with protein, vegetables, and happy tummies.

Ingredients

  • 5–6 tablespoons butter
  • Frozen hash browns (optional)
  • 1 1/4 pounds ground sausage
  • 1 bell pepper, diced
  • 1 yellow onion, diced
  • 7–8 large eggs
  • 2 tablespoons milk
  • Sea salt and pepper
  • 2 cups shredded sharp cheddar
  • 12 burrito-size flour tortillas

For serving

  • Salsa
  • Sour cream
  • Avocado
  • Cilantro

Directions

  1. Melt 3–4 tablespoons butter in a large skillet over medium-high heat. Cook hash browns undisturbed until crisp and golden; season, flip, and repeat. Set aside.
  2. In the same pan, melt 2 tablespoons butter and sauté bell pepper and onion until tender. Set aside.
  3. Brown the sausage in the same pan, breaking it into small pieces, until cooked through and crisp. Set aside, leaving the drippings in the pan.
  4. Whisk eggs with milk, salt, and pepper. Cook until softly scrambled and remove from heat.
  5. To assemble, layer cheese, hash browns, sausage, vegetables, and eggs in each tortilla. Fold tightly, wrap in foil, and freeze for up to 2 months.
  6. To reheat from frozen, bake at 350°F for about 30 minutes, until warmed through.
