Beef French Onion Soup

A hearty French onion soup with tender chuck roast, bone broth, toasted sourdough, and melted fondue.

Any meal that is simple, healthy, and delicious is a grand slam in our home. This can be made on the stovetop, in a traditional slow cooker, or in a multicooker.

Ingredients

  • 6 tablespoons salted butter, divided
  • 1 1/2 pounds chuck roast, cubed
  • Salt and pepper
  • 2 large yellow onions, thinly sliced
  • 1/2 teaspoon coconut sugar
  • 1 teaspoon sea salt
  • 5 cloves garlic, minced
  • 1 tablespoon unbleached all-purpose flour, arrowroot, or tapioca flour
  • 5 cups chicken or beef bone broth
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • 1/2 teaspoon freshly ground black pepper
  • 1 package fondue
  • Toasted sourdough bread

Directions

  1. Season the beef with salt and pepper. Sauté with 3 tablespoons butter until seared, then set aside.
  2. Deglaze the pot with a spoonful of broth, scraping gently. Pour the liquid over the beef.
  3. Add the remaining butter, onions, coconut sugar, and sea salt. Caramelize until golden, about 30 minutes. Add garlic and cook until fragrant.
  4. Sprinkle in flour and stir until incorporated. Cook 1–2 minutes.
  5. Return the beef and liquid. Add remaining broth, Worcestershire sauce, bay leaves, and black pepper.
  6. Cover and braise for about 1 hour, slow-cook on low for 2–3 hours, or simmer gently on the stovetop for 2 hours.
  7. Before serving, melt the fondue and toast the sourdough with butter.
  8. Ladle into bowls, add toast, and top with fondue. For little ones, serve the meat, bread, and cheese separately if preferred.
