Breakfast Cookies

A filling, lightly sweet breakfast cookie made with bananas, peanut butter, oats, and maple syrup.

Our children love cookies. Breakfast can be another story, especially before a full day of play. Cue breakfast cookies: nutritious, filling, and still very much a treat.

Ingredients

  • 2 large ripe bananas
  • 1/2 cup peanut butter
  • 1/4 cup maple syrup
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 3 teaspoons ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 1/3 cups old-fashioned oats
  • 1 cup flour
  • 1 cup chocolate chips

Directions

  1. Preheat oven to 350°F.
  2. Combine bananas, peanut butter, maple syrup, egg, and vanilla.
  3. Mix in cinnamon, baking soda, sea salt, oats, flour, and chocolate chips.
  4. Mix until the dough is combined.
  5. Chill for 10 minutes—or overnight.
  6. Bake for 10–12 minutes, checking on the early side since every oven is different.
  7. Enjoy!
