Protein Molasses Cookies
Quick, softly spiced molasses cookies made with almond butter and chocolate protein powder.
These began as a nourishing way to add more iron and protein during pregnancy. They are quick, easy, delicious, a hit with the children, and store well in the refrigerator or freezer.
Ingredients
- 2 tablespoons softened butter
- 3 tablespoons almond butter
- 1/2 teaspoon pure vanilla extract
- 1/4 cup turbinado sugar
- 3 tablespoons dark unsulphured molasses
- 1/4 teaspoon sea salt
- 1/4 teaspoon baking soda
- 1 teaspoon ginger
- 3 tablespoons organic unbleached all-purpose flour
- 7 tablespoons chocolate protein powder
- 1 egg
Sugar coating
- 1–2 tablespoons turbinado sugar
Directions
- Preheat oven to 350°F.
- Mix butter, almond butter, vanilla, and sugar. Add molasses, sea salt, baking soda, ginger, flour, and protein powder.
- Add the egg last and mix until thoroughly combined.
- Chill the sticky dough for 30–60 minutes if time permits.
- Roll into balls and coat with turbinado sugar.
- Bake for 8–10 minutes, taking care not to overbake.
- Rest for 3–5 minutes before transferring to cool.
